An amazing cut, moist and delicious.  Can be roasted just like a pot roast and served with carrots and potatoes; or shredded and served as pulled pork.  Amazing either way!  Average 3 to 4 lb. roasts.
Boneless Loin

Tenderloin

Ham Steaks

Average 2 lbs., these steaks are delicious grilled and we have cured some with salt and, voila, country ham!
Bone-in Chops
$9.00 per lb. CURRENTLY OUT OF STOCK
Two chops to a pack, average 1 1/ 2lb.  packages.  We like to brine ours and cook them in a cast iron pan …. a quick searing 5 minutes on one side, 4 on the next.  Let them rest 5 minutes and cut into a taste of heaven.

Fatback, Raw

Stock/Broth Parts
$5.00 per lb.
Hocks, shanks, soup bones, ears, feet, tails … all the parts with lots of marrow or collagen to make a nutritious and thick bone broth.  Trying cooking some pintos in this broth!
Skin
$2.00 per lb.
Put them on the grill and crisp them up, or season and fry them in hot oil
Head
$2.00 per lb.
Makes a great base for a hash and we’ve actually made some AMAZING head cheese at the Homestead.
Leaf Fat (Lard)

Nutritionists now say that rendered lard from non-gmo, pastured pork is a good way to fry!   Chunks of lard ready to be rendered down.
